OK, I've decided to try being vegetarian for 3 weeks. 21 days. No meat. Milk and eggs are allowed.
Lets see how this goes. This is day 3.

Day 1 Saturday Mar 27
  • B: Eggs
  • L: Red rice with Lima Beans
  • S: Strawberries are finally back in season. 98c an lb at Henrys!
  • D: Red rice with chinese eggplant stirfry

Baby Lima Beans recipe: Cook in the same bowl as rice so they cook together. Chop half a red onion to tiny bits, a clove of garlic, saute with oil. Add lima beans. Season with sweet chili sauce.

Day 2 Sunday Mar 28
  • B: 1 egg omelet with greens, toast, OJ
  • L: tomato soup with (roasted fenugreek, cumin), whole wheat bread with OO
  • S: 2 mini muffins
  • D: navy beans & green chards in red chili coconut sauce, white rice

How to print a one-time-coupon to PDF

We've all used coupons from Smartsource and Coupons.com and we also kind of do not like how it just sends off the coupon to the printer. We sometimes like to save the coupon to a PDF, so maybe we could edit the PDF file (to say, print 4 coupons per page), remove some obscenely colorful banners from them, or maybe we recycled our printer at Staples, and just want to print it from work.

How do we do it?

Here's what worked for me:

1. You need an actual printer (or at least its driver) and a PDF printer such as Acrobat, CutePDF or any other software that distills a PDF file.

2. Power off your printer.

3. Open the coupons link, and print.

4. The coupon will be sent to your printer.

5. Your printer driver will now queue up the print job, so it gets printed when you next turn on the printer.

6. Here's the hack - we now move the print job to a different printer - in this case your PDF printer.

7. MACs and Unix systems allow moving jobs between printers but Windows does not. So we try another hack. Open the print jobs queue (double click the little printer icon in the system tray).

8. Click on the Printer -> Properties Menu. Select Ports. Change it from the current port to the PDF printer port.

10. In the Advanced Tab in the same Properties box, change the "Driver" to the PDF driver corresponding to the PDF port. Hit OK.

11. Thats it! The PDF virtual printer should now take over the job and you have your PDF'ed coupon. Now do whatever editing you want.

I made this for lunch yesterday and we loved it. The nice thing is you get to re-use the marinade as the sauce.

2 boneless skinless breasts of chicken
1 cup peach low fat yogurt
1 tsp Sriracha chili sauce
1 tsp Italian dressing
Salt

Chop the chicken into cubes. Mix the chicken with all the ingredients above in a bowl. Thats our marinade. Keep the marinated chicken in the fridge for a few hours or even overnight.

Heat a saucepan, and once hot, place the chicken pieces on the pan. Do not add the sauce, (you can gently scrape the marinade off the chicken with a spoon). We are not adding any oil, the chicken should cook in its own oil. After 2 minutes, turn the pieces over and let cook for another minute or so. Once the chicken pieces are about cooked, add the sauce to the chicken, lower the heat and cover and heat until the sauce boils. Remember the sauce contained raw meat, so make sure you give it a thorough boiling.
